This competition calls for both amateur and professional cooks to submit their most inventive recipes pairing this years journey ingredients with Scharffen Berger chocolate in Sweet, Savory and Libation classes.
One grand prize winner in each category will win $5,000 and other prizes. So if youre a state of the art cook with a liking for pairing various ingredients with fine artisan chocolate, or you are a chocoholic like me who likes to experiment in the kitchen, you are invited to enter a recipe. The competition is a reflection of Scharffen Bergers spirit of creativity, asking chocolate-lovers to consider chocolate in new and exciting ways. Our goal was to reinforce the way Yanks thought about chocolate. Were looking for that same forward-looking spirit in this recipe contest. Scharffen Berger Chocolate Maker is the first of the workman bean to bar chocolate makers established In America during the past fifty years. Bringing its founders experience in winemaking to the art of choosing cocoa beans, the Corporation has since led the explosive expansion in the workman chocolate class it made.
As well as being the 1st Yank chocolate manufacturer to feature the % of cacao content on its labels, Scharffen Berger was also first to sell cacao nibs, the dark, nut-like bits of cacao beans that remain after roasting and shelling from which chocolate is made. And the 1st one to involve the sort of exotic ingredients that spark the brave cooks imagination. To be eligible, entries must call for Scharffen Berger chocolate with one adventure ingredient from the following list : popping candy ( unflavored or flavored ), wattleseed, palm sugar, basil, mustard seeds, coriander, black sesame seeds, black or pink peppercorns, chili pepper ( fresh or whole dried ), coconut milk, kaffir lime leaf, matcha tea, mango, plantain, jicama, tapioca pearls ( any size ), tamarind ( or tamarind paste ), and / or cacao nibs. Winning recipes in the 2007 Chocolate journey contest included Scharffen Berger Chocolate Wasabi Pom-Poms, made with pomegranate seeds covered in bittersweet chocolate and dusted with cocoa-wasabi powder ; chai-spiced Dark Chocolate-Caramel Calzone featuring semi-sweet chocolate, soft caramel candy, cardamom and coriander ; and Grapefruit Madeleines with Rosemary-Infused Chocolate Drip . The Chocolate journey contest will accept entries from Oct 1st, 2008 thru January four, 2009 and is open to US residents at least eighteen years old.
